At this point in the growing process, the tea buds are still covered by fine white hair, which is why this tea is referred to as white tea.

In addition to the early harvest that makes white tea different from other teas, white tea is not fermented. The lack of fermentation keeps tea's natural anti-oxidants in place and helps create the delicate flavor that makes white tea so unique.

This lack of fermentation makes white tea a particularly healthy beverage. Because the tea leaves are left in their most natural state, the anti-oxidants are uncompromised and at their most powerful.
